Why you need it: To inhibit re-fermentation of wine after bottling. Such re-fermentation would cause the corks to pop and the wine to spill out – makes an awful mess, not to mention a waste of a good wine!
Stabilizing Solution:
½ Campden tablet
½ t. Potassium Sorbate
For each gallon of wine, dissolve the above in ¼ cup of water and add to wine at least 3 days prior to bottling.
